Soy Chorizo Breakfast

This morning I wanted to cook the Soy chorizo that’s been in the fridge for almost a month. LOL. It’s still good don’t worry. What I like about soy chorizo is that it’s an alternative from the traditional sausage-based chorizo. It still has all the flavors and physical appearance of a Mexican chorizo.

Just know the soy chorizo is not grill friendly! It’s best to cook on a sauce or frying pan. It will still have the delicious flavor and it’s super easy and quick to cook.

Soy chorizo has up to 60% less fat than chorizo. It is relatively high in sodium. This one I used was 544 mg. The upsides to soy chorizo is that it also contains some dietary fiber, which pork chorizo does not.

1. 1/2 soy chorizo
2. 2 cups spinach (these will wilt when you cook them)
3. 2 eggs
4. salt and pepper to taste

1. heat up the frying pan and place the soy chorizo onto the pan, mix well with your spatula
2. in a separate bowl, whisk the eggs and add spinach – sprinkle salt and pepper to taste
3. add the egg bowl into the frying pan of soy chorizo
4. use medium heat and flip to the other side and wait for it to turn brown-about 4 min
5. serve with toast or with avocado
