Pancit Zoodles with chopped veggies
Yields 5 servings
Ingredients:
1 head of bok choy chopped (Chinese Chard) washed, and cut into 1 inch strips
2 cups chopped carrots (julienne slices)
1/2 cup chicken stock
3/4 cup corn starch
2 tablespoon minced garlic
1 cup chopped onions
1 1/2 tb oyster sauce
1 bag of zoodles, or you can grate your own with a grater (bought mine at Target)
1 tsp grounded pepper
1 block (12-15 oz) extra firm tofu (make sure itโs extra firm for texture)
1/2 tbs salt
2 tbs cornstarch
1 1/2 cups snow peas
1 tsp light low sodium soy sauce
Directions:
1. Wrap the tofu in a clean dish towel or cheese towel, then place a heavy object on top. For best results let it sit for 30 min. Then remove object, unravel the tofu, and slice into even cubes
2. Douse the tofu into a bowl with the corn starch, making sure to evenly coat
3. In a wok or large frying pan, fry the tofu for 5-7 minutes, stirring occasionally. You want the tofu to be a bright, brown crispy color
5. Add the garlic, onion, and sautรฉ until the onion is softened and garlic slightly brown
6. Pour in 1/3 c chicken stock, and gently stir
7. Start adding the chopped vegetables into the pan, stirring occasionally until vegetables become slightly soft
8. Add 1 1/2 tbs oyster sauce
9. Sprinkle salt and pepper into the pan, stir evenly to coat the ingredients
10. Spiralize the zucchini on serving plates (these will not go on the hot pan)
11. Top the plate with tofu and the vegetables
