~ Let’s tofu ‘bout it ~
Tofu as you can already tell from previous posts, is one of my favorite source of a plant-based protein. It’s naturally gluten free and contains NO cholesterol, and is an excellent source of iron and calcium (perfect replenishment for a post-workout meal).
In today’s lunch bowl I serve my fried tofu with sautéed broccoli, asparagus, cabbage and onions on top of white rice (my fave complex carbohydrate. Y’all…carbs are good for you, I promise).
