It just so happens that tonight’s dinner is part of the Meatless Monday trend. Tonight I made Red Thai Curry with Tofu 🥘 All you need for this dish is 1 block of firm tofu. Having firm tofu allows you to press out the water faster AND allows for the tofu to absorb more of your cooking, while getting rid of the excess water. You’re also going to need 1 can of coconut milk, chopped veggies of your choice, 1 tbsp soy sauce (I used Tamari), 1 tbsp maple syrup, 1 tsp paprika, and then cilantro to top it off. Add some jalapeños if you want it to be spicy-er 😂🥵
