Honey garlic butter shrimp 🍤 ✨
Felt like taking a day off from working out and just wanted to clear my mind with something tasty. Who can relate? 🤣
Ingredients:
1 pound shrimp, deveined
6 cloves garlic, chopped
Sat and pepper, to taste
1 inch grated ginger
1/4 tsp cayenne pepper
2 jalapeños, diced
3 tbsp butter
3/4 cup canned coconut milk
2 tbsp low sodium soy sauce (I use Tamari)
3 tbsp honey
Zest and juice from 1 lime
For the Mango 🥭 salsa 💃🏻 (which was delicious)
1 mango
1 jalapeño, diced
2 tbsp EVO
Juice of 1 lime
1/2 parsley
(You’ll mix these ingredients up in a bowl and serve it with rice)
Instructions:
1. Pat the shrimp dry and sprinkle with salt and pepper
2. Heat olive oil in a large skillet over medium heat. When the oil is hot, add the shrimp and cook until pink-about 2 minutes. Add the garlic, ginger, cayenne, jalapeños, and butter
3. Add the coconut milk, soy sauce, and the honey, stir to combine and bring mixture to a simmer. 2-3 minutes.
4. Remove from the best and stir in the lime juice and zest
