Garlic shrimp tortellini with veggies 🥦🍤 (idea inspired by winniesbalance)
This dish was so tasty! I knew I wanted seafood last night for dinner so I browsed through Instagram and chose which dish would be the winner. Clearly: it’s this one and I have no regrets!
Ingredients:
1 pound frozen shrimp (de-veined)
1 C tortellini pasta
1 C frozen veggies
1/4 C butter
Olive oil
3 garlic cloves, crushed
1/4 tsp salt, add more to your liking
1/4 tsp garlic powder
1/4 tsp black pepper
1/4 tsp dried basil
1. Cook tortellini pasta to instructions, drain, set aside
2. In a saucepan, add your olive oil and crushed garlic cloves. Stir until garlic is brown and fragrant. About 2 minutes.
3. Add shrimp and frozen vegetables to saucepan. Stir frequently and drain out excess water when needed. Stir for about 10 min to make sure everything is unfrozen.
4. Add tortellini pasta to the shrimp/veggie mix and the 1/4 C butter AND your seasonings.
5. Mix, mix, mix!
And there you have it. A simple dinner filled with 24 G protein, 38 g carbohydrates, 32 g fat, 8 g fiber, 186 mg cholesterol
